Egg Appe

Ingredients
- 3 eggs
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 capsicum, finely chopped
- 2-3 green chilies, finely chopped
- Handful of fresh coriander leaves, chopped
- Salt to taste
- Ghee for cooking
Directions
1. In a bowl, beat the eggs well.
2. Add the chopped onion, tomato, capsicum, green chilies, coriander, and salt to the beaten eggs. Mix everything together.
3. Heat the appe pan and add a little ghee in each mold.
4. Spoon the egg and vegetable batter into each mold, filling them almost to the top.
5. Cover the pan and cook on low heat for a few minutes until the bottom is golden brown.
6. Carefully flip each appe using a spoon and cook the other side until it's cooked through.
7. Once both sides are cooked and golden brown, remove the Egg Appes from the pan.
8. Repeat the process for the remaining batter.
9. Serve the Egg Appe’s hot with chutney of your choice.
