Fruit Cake With Edible Flower Frosting

Ingredients

- Jowar Flour 100 gm

- Oats flour 100 gm

- Tapioca flour 2 tbsp

- Aluminum-free baking powder 1 tsp

- Pink Himalayan Salt 1 pinch

- Dates (de-seeded and soaked in water) 100 gm

- Overripe Banana 1

- Vanilla pod 1/2

- Cinnamon powder 1/4th tsp

- Fresh/ Frozen Blueberries pureed 100 gm

- Mango pureed 1 

 

For the frosting

- Cashews (soaked in water) 100 gm

- Vanilla pod 1/4

- Raw organic honey  2 tbsp

- Dried edible flower petals for decor

Directions

Step 1

Sift the flours with baking powder and salt and keep aside. Puree the dates into a smooth paste, add banana, cinnamon powder and scrape the inside of the vanilla pod and blend this together

 

Step 2

Preheat oven to 200 C. Gently mix flour with date puree mixture (Don’t overmix, else it’ll become sticky). Pour this into a glass cake mold lightly greased with coconut oil and bake at 190 C for 45-50 mins

 

Step 3

While cake is cooling down, make cashew frosting by blending soaked cashews until soft and creamy. Add little water if necessary but don’t make it too drippy. Add honey and scraped vanilla seeds. Blend once.  Store in refrigerator until cake is ready for frosting.

Once cake has cooled down, cut it into two halves horizontally. Pour blueberry puree on cut surface, followed by mango puree. Place both halves together again and frost with cashew cream until you have a smooth layer of frosting.

 

Step 4

Top with rose petals and other dried edible flowers. Keep in refrigerator until its time to celebrate.

Note 1: This is a slightly dense cake, more like a fudge cake, so it won’t be soft and light. But it’s delicious nonetheless.
Note 2: Please avoid the cashew cream if you have insulin resistance.

They are exceptional at helping your body recover and fight off chronic infections.
