Banana Muffins

- Overripe Bananas: 2 

- Amaranth flour: 1 cup

- Oatmeal flour: 1/2 cup

- Coconut palm sugar: 3/4 cup

- Baking powder: 1/2 tsp


Step 1

Mash the bananas till soft and pulpy. Mix all the other ingredients to form a smooth batter pour into a muffin tray lined with parchment paper muffin cups. Bake at 180 degrees C  for 20 mins or till a toothpick inserted in the center of the muffin comes out clean.

Bananas are a good source of minerals such as manganese, selenium, copper, boron, molybdenum and potassium. They are a powerful antiviral food. Bananas are also very healing for the gastrointestinal disorders. Oats are important source of vitamins, minerals, fiber and antioxidants. They help to lower cholesterol, regulate blood sugars and relieve constipation.
