Chicken Biryani

  • Ghee: 5-6 tbsp
  • Onion: 4-5 
  • Tomato: 3-4 nos.
  • Rice: 500 gm
  • Chicken: 500gm
  • Red chilli powder: As per taste
  • Turmeric powder: As per the requirement
  • Green Chilli: 6-7 
  • Salt: As per taste
  • Ginger: 2-3 inch
  • Garlic: 4-5 pods
  • Garam masala powder: 1 tsp
  • Coriander powder: 1tsp
  • Whole spices: 
  • Cinnamon stick (1), Clove (2-3), Cumin seeds (1tsp), Bay leaves (3-4), Cardamom (2-3)
  • Coriander leaves for garnishing
  • Mint leaves for garnishing


  1. Heat the ghee in small cauldron and add sliced onion to it. Keep stirring onion till it gets brown in color. Once it turns brown, remove it from the utensil and keep it on tissue paper to remove excess fat. 
  2. Clean the chicken, and marinate the chicken using green chilli paste, garam masala powder, red chilli powder, turmeric, coriander powder and salt. Mix it well, close the lid and keep it aside for 40-45 mins. 
  3. In a cooker, heat ghee and add the marinated chicken pieces to it and mix it well. Add water as per the requirement. Add sauteed onions to it. Close the lid and let it cook. Take 4-5 whistle till chicken gets cooked. 
  4. Boil the water in a container. Add cinnamon, clove, cumin seed, bay leaves, cardamom, salt and ghee to boiled water. Add washed rice to it and keep in on medium flame till the rice is half cooked. Discard the water.
  5. Once chicken gets cooked, add 1 cup water to the chicken, mix the gravy well. Spread the half cooked rice over the chicken gravy. 
  6. Garnish the layer of rice with chopped coriander and mint leaves. Add some ghee on top if required. Take another whistle to cook the partially cooked rice completely.
  7. Chicken Biryani is ready to serve!
